  1. (Cretan cuisine) Small cheese or herb pies. They resemble common cheese or stuffed pies, with filling and serving variations. There are three types of kalitsounia: the salty kalitsounia, stuffed with mizithra and usually with various herbs from the Cretan land (some are also baked without cheese) and the sweet kalistounia, also stuffed with mizithra but with honey on top. Another type of kalitsounia is made with dough and not filo pastry (used to make the other varieties) and stuffed with mizithra and cinnamon. Kalitsounia can be either baked (dough) or fried (filo pastry).
